In Progress - #69: Try 5 new recipes

Today Steven & I celebrated Lodgegiving, one of our favorite traditions since moving to D.C. Hosted by three of our friends who live in "The Lodge," the day gives us a chance to celebrate Thanksgiving with our D.C. family before heading out to the various parts of the country we call home.

To mark the occasion, I tried a new recipe - Sweet Potato Souffle. Quick, easy and delicious, this recipe is a five-star keeper!


Sweet Potato Souffle

Souffle
  • 1 lg. can sweet potatoes (1 lb. 13 oz.)
  • 1 1/2 c. sugar
  • 2 eggs
  • 3/4 stick butter, softened
  • 1 c. milk
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  1. Combine all ingredients with electric mixer. Pour into baking dish.
  2. Bake 35 to 45 minutes at 300 degrees or until almost firm.
  3. Add topping during last 15 minutes of baking time.

 Topping 

  • 3/4 stick butter
  • 1/2 c. chopped pecans
  • 1/2 c. brown sugar
  • 3/4 c. crushed corn flakes
  1. Melt butter and brown sugar.
  2. Add nuts and corn flakes.
  3. Spread over top of souffle and bake 15 minutes or until crunchy.
